Ingredients
– ½ lb. penne pasta
– 1 yellow onion, diced
– 2 cloves garlic, minced
– 1 Tbsp olive oil
– 1 15oz. can diced tomatoes (with juices)
– ½ tsp dried oregano
– ½ tsp dried basil
– Pinch of crushed red pepper (optional)
– ½ tsp salt
– Freshly cracked black pepper
– 2 Tbsp tomato paste
– 2 oz. cream cheese
– ¼ cup grated Parmesan
– 4 oz. fresh spinach
Instructions
1. Cook pasta until al dente and drain.
2. Sauté onion and garlic in olive oil.
3. Add tomatoes, spices, and tomato paste.
4. Stir in cream cheese and Parmesan until creamy.
5. Add spinach and wilt.
6. Toss pasta in the sauce and serve warm.
