Ingredients

- 2 pounds chicken thighs, boneless and skinless
- 4 cups chicken broth
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can refrigerated biscuit dough
Instructions
- Place chicken thighs in the bottom of the Crock Pot.
- Add chopped carrots, celery, and onion on top of the chicken.
- Pour chicken broth over the top, then season with garlic powder, onion powder, thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours, or until chicken is cooked through and tender.
- Remove chicken, shred it, and return to the Crock Pot.
- Open the biscuit dough, tear off pieces, and drop them into the broth mixture.
- Cover and cook on high for an additional 30 minutes or until dumplings are fluffy.
Notes
- For a thicker broth, add 1 tablespoon of cornstarch mixed with 2 tablespoons of water before adding dumplings.
