Description
A comforting and creamy broccoli cheddar soup reminiscent of Panera Bread, made easily in a crock pot.
Ingredients

- 4 cups broccoli florets
- 1 cup shredded carrots
- 1 cup chopped onion
- 4 cups vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a crock pot, combine broccoli, carrots, onions, and vegetable broth.
- Cook on low for 4-5 hours or until vegetables are tender.
- Puree half the soup with an immersion blender for a creamy texture.
- Add cheddar cheese, heavy cream, garlic powder, salt, and pepper. Stir to combine.
- Cook for an additional 30 minutes to melt the cheese.
- Serve hot, garnished with extra cheese if desired.
Notes
- For a lighter version, substitute heavy cream with milk.
- Feel free to add more vegetables like cauliflower or potatoes.
