Description

A comforting and creamy broccoli cheddar soup reminiscent of Panera Bread, made easily in a crock pot.


Ingredients

Scale
  • 4 cups broccoli florets
  • 1 cup shredded carrots
  • 1 cup chopped onion
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a crock pot, combine broccoli, carrots, onions, and vegetable broth.
  2. Cook on low for 4-5 hours or until vegetables are tender.
  3. Puree half the soup with an immersion blender for a creamy texture.
  4. Add cheddar cheese, heavy cream, garlic powder, salt, and pepper. Stir to combine.
  5. Cook for an additional 30 minutes to melt the cheese.
  6. Serve hot, garnished with extra cheese if desired.

Notes

  • For a lighter version, substitute heavy cream with milk.
  • Feel free to add more vegetables like cauliflower or potatoes.
