- 1 pound turkey bacon
- 1 onion diced
- 3 cloves garlic minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken broth
- 2 cups uncooked lasagna noodles broken into pieces
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon sugar
- 2 cups ricotta cheese
- 1 cup mozzarella cheese shredded
- 1/2 cup Parmesan cheese grated
- Salt and pepper to taste
Instructions
- In a skillet, cook the turkey bacon until crisp, then set aside.
- In the same skillet, sauté the onion and garlic until translucent.
- Transfer the cooked bacon, onion, and garlic to the crockpot.
- Add the crushed tomatoes, chicken broth, broken lasagna noodles, basil, oregano, and sugar.
- Stir well and cook on low for 6 hours or high for 3 hours.
- Before serving, stir in ricotta cheese and let it melt into the soup.
- Top with mozzarella and Parmesan cheese before serving.
Notes
- For a vegetarian option, substitute turkey bacon with mushrooms.
- Adjust seasonings according to your taste preferences.
