Description

Crockpot Taco Potatoes are a delicious and easy comfort food that combines the savory flavors of taco seasoning and turkey bacon. Perfect for busy weeknights!


Ingredients

  • 4 medium potatoes
  • 1 pound turkey bacon
  • 1 cup shredded cheese
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 onion, diced
  • 2 cloves garlic, minced

Instructions

  1. Peel and chop the potatoes into bite-sized pieces.
  2. In a large skillet, cook the turkey bacon until crispy, then chop it into pieces.
  3. In the crockpot, combine the potatoes, turkey bacon, black beans, corn, onion, garlic, and taco seasoning.
  4. Add a cup of water or chicken broth and stir well.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Stir in the cheese during the last 10 minutes of cooking until melted.

Notes

  • For a spicier version, add diced jalapeños.
  • Top with sour cream and green onions before serving.
