- 4 medium potatoes
- 1 pound turkey bacon
- 1 cup shredded cheese
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 onion, diced
- 2 cloves garlic, minced
Instructions
- Peel and chop the potatoes into bite-sized pieces.
- In a large skillet, cook the turkey bacon until crispy, then chop it into pieces.
- In the crockpot, combine the potatoes, turkey bacon, black beans, corn, onion, garlic, and taco seasoning.
- Add a cup of water or chicken broth and stir well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir in the cheese during the last 10 minutes of cooking until melted.
Notes
- For a spicier version, add diced jalapeños.
- Top with sour cream and green onions before serving.
