- 1 cup graham cracker crumbs
- 1/4 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup shredded coconut
- 1/2 cup chopped pecans
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, cocoa powder, and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
- Add in the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Melt the chocolate chips in a microwave or double boiler and let it cool slightly before adding to the cream cheese mixture. Mix until well combined.
- Fold in shredded coconut and chopped pecans into the mixture.
- Pour the cheesecake filling over the prepared crust.
- Bake for 45-55 minutes, or until the center is set but still slightly jiggly.
- Allow to cool at room temperature, then refrigerate for at least 4 hours or overnight before serving.
- Garnish with additional coconut and pecans if desired, and serve chilled.
