Ingredients

  • 1 pound ground turkey
  • 6 slices turkey bacon
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 2 cups beef broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded cheese (optional)

Instructions

  1. In a skillet, cook the turkey bacon until crispy. Remove and chop.
  2. In the same skillet, brown the ground turkey until fully cooked.
  3. In the crock pot, combine turkey bacon, ground turkey, beans, corn, bell pepper, onion, garlic, diced tomatoes, beef broth, chili powder, cumin, paprika, salt, and pepper.
  4. Stir everything together and cook on low for 6-8 hours.
  5. If using, sprinkle cheese on top during the last 15 minutes of cooking.
