- 4 large russet potatoes
- 4 strips turkey bacon
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 2 tablespoons chopped chives
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake for 45 minutes or until tender.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sauté until the onion is translucent.
- Remove the potatoes from the oven, let cool, then scoop the insides into the pot.
- Add the chicken broth and heavy cream, stirring to combine.
- Chop the turkey bacon and add it to the pot. Simmer for 10 minutes.
- Stir in the cheddar cheese and sour cream until melted and creamy.
- Season with salt, pepper, and paprika. Serve hot, garnished with chives.
Notes
- For a vegetarian version, omit the bacon and use vegetable broth.
