A delicious and hearty dish combining tender potato boats filled with a flavorful turkey bacon cheeseburger mixture.

- 4 large russet potatoes
- 1 pound ground turkey
- 6 slices turkey bacon, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Poke holes in the potatoes with a fork and bake for about 45 minutes or until tender.
- While the potatoes are baking, cook the turkey bacon in a skillet until crispy. Remove and set aside.
- In the same skillet, add the ground turkey, onion, garlic, Worcestershire sauce, smoked paprika, salt, and pepper. Cook until the turkey is browned.
- Once the potatoes are done, cut them in half lengthwise and scoop out some of the flesh.
- Mix the scooped potato flesh with the turkey mixture, sour cream, and cheddar cheese.
- Fill the potato halves with the mixture and top with remaining cheese and turkey bacon.
- Bake for an additional 15 minutes until the cheese is bubbly.
Notes
- For extra flavor, add your favorite burger toppings like lettuce or tomato.
- These stuffed potatoes can be made ahead of time and reheated.
