Learn how to make the perfect oven-baked herb salmon, paired with garlic potatoes and roasted asparagus for a delicious and healthy meal.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 pound baby potatoes
  • 2 tablespoons butter
  • 1 bunch asparagus
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the garlic potatoes by halving them and tossing with olive oil, garlic powder, salt, and pepper. Spread them on a baking sheet.
  3. In a bowl, mix olive oil, oregano, thyme, salt, and pepper, then rub over the salmon fillets.
  4. Place the salmon on the baking sheet with the potatoes and bake for 15 minutes.
  5. After 15 minutes, add the asparagus and the butter to the baking sheet and bake for an additional 10 minutes until everything is cooked through.

Notes

  • Feel free to add lemon slices on top of the salmon for extra flavor.
  • Leftover salmon can be flaked into salads or sandwiches.
