These restaurant style ground beef enchiladas are easy to make and packed with flavor, perfect for a weeknight dinner.

- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups enchilada sauce
- 8 corn tortillas
- 2 cups shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef with diced onion and garlic until browned.
- Stir in the cumin, chili powder, and salt.
- Soften the tortillas in a pan or microwave.
- Fill each tortilla with beef mixture, roll them up, and place them seam-side down in a baking dish.
- Pour enchilada sauce over the top and sprinkle with cheese.
- Bake for 20 minutes or until cheese is melted and bubbly.
Notes
- For extra flavor, add black beans or corn to the meat mixture.
- Top with fresh cilantro or sour cream before serving.
