Description

These restaurant style ground beef enchiladas are easy to make and packed with flavor, perfect for a weeknight dinner.


Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef with diced onion and garlic until browned.
  3. Stir in the cumin, chili powder, and salt.
  4. Soften the tortillas in a pan or microwave.
  5. Fill each tortilla with beef mixture, roll them up, and place them seam-side down in a baking dish.
  6. Pour enchilada sauce over the top and sprinkle with cheese.
  7. Bake for 20 minutes or until cheese is melted and bubbly.
