A comforting and easy recipe for the whole family that combines meatloaf patties with tender potatoes cooked in a slow cooker.

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup onion, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 medium potatoes, quartered
- 1 cup beef broth
- 1/4 cup ketchup
Instructions
- In a bowl, mix together ground beef, breadcrumbs, egg, onion, garlic powder, salt, and pepper. Form into patties.
- Place quartered potatoes at the bottom of the slow cooker.
- Pour beef broth over the potatoes and add the meatloaf patties on top.
- Drizzle ketchup over the patties.
- Cover and cook on low for 6-8 hours or until the meat is cooked through and potatoes are tender.
Notes
- For added flavor, try mixing in your favorite seasonings into the meat mixture.
- Leftovers can be used for sandwiches or a quick meal.
